I is one happy hunting fisherman! Caught just after full dark at Breezy Point on the Red north of Selkirk. Been a while for me due to a low water summer. Looking forward to supper tomorrow night! Walleye for those who are wondering. Not giant- a decent eater....

The best eating there is, and as you can probably tell from my name, I have spent many hours chasing them in my home waters of Lower Detroit River/Lake Erie.

Burbot is the very best fresh water fish imho. I would rate the Walleye second best, then perch.

Although as I came from southern China, I know many great fish cocking technique....

However you don't need to know the name of the fish to put it on the dish... :)

I 2nd this, Catfish is Da best Then Perch Then lake trout then Walleye or has we call it here Doré.

Doc you caught more fish then me this Year 0 fish caught this year and I went out 3 times.
But a Bad Day fishing is better then a good day at work.

You got that right about work/fishing!

Burbot/Mariah I take a pass on. I have a few friends that fish for them- specifically for the livers. Bleah! A bit too strong tasting for me.
Like wise cats.

When it comes to taste, I gotta stop and think a minute pike vs walleye/pickerel.
Love both, and I give cold water northerns a slight edge over the pickerel- just slight :mrgreen:
Smallmouths are high up on the list, but it's been a while for me to fish for them.

Can't go wrong with fresh water fish. I eat them all and don't have a preference.

not much of a fresh water fish eater except for salmon, I just fish for sport I release 99% of my catch except for two wall hangers, I have a big salmon and nice size rainbow...iv'e always released small mouth or large mouth bass iv'e caught some big boys, :mrgreen: .. those are my favorite game fish to catch hate seeing people keeping those.... :(
as far as eating go's don't forget jumbo crappie, you hit on a school your laughing... 8)

Like properly cooked Halibut, Burbot are VERY mild tasting (milder than Halibut), tender,

juicy and wonderful, floured and fried in butter or thinly battered & deep fried - oh so good.

Sea bass are also good, fried in butter, or baked.

Dolly varden and cut-throats are also special, especially the sea-run dollies & cuts that follow the steelhead up the rivers.

As to Salmon, it is nice to BQ a Sockeye in January or Feb (caught in August/Sept) - nice change of pace.

River caught Sockeye make the best salmon salad sandwiches - bit of lemon, salt, pepper and small-cut onion & of course

home made white bread.
