Made use of the cool weather to cold smoke some back bacon. Since the smoker was fired up I might as well do some cheese too. Cheese and bacon went on about 3:30am while it was cool. The cheese came off about 7:30 just as the temperature started rising ( want to stay under 80F). The bacon came off about 12:30 when my pellet tray ran out. I was using half apple pellets and half cob.

The bacon is a custom job for a friend. You'll have to try and talk him out of some of it lol. Just be warned, if you get too close to it he might roll over your toes.

Afraid not lol. It's a hobby of mine. Doing custom orders makes it a job and it stops being fun.
