Post subject:  Pastrami and Cheese

I got some cheese cold smoked and pastrami hot smoked yesterday. I could package the cheese this morning but the pastrami just came out of the sous vide after 20 hours and needs to chill in the fridge before slicing.

That looks absolutely appetizing. I admire there are still some individuals that do thins old school. Will you be baking any rye bread in the very near future?

I made some dark rye with the last pastrami I made.

Got it sliced and vac packed tonight.
